Back in 2023 a new restaurant opened their doors right near Vassar College.

Spettro, an Italian Gastropub, opened their doors on December 1st, 2023 at 44 Lagrange Ave in Poughkeepsie.

Since they've opened, Spettro has become one of the more popular restaurants in the area serving up incredible pizza, steaks, burgers, pasta dishes and delicious cocktails.

Building on the success of Spettro, owners Giovanni Illardi and Michael Purcell have announced a new venture that "reimagines the traditions of Italian-American cuisine with a fresh and inviting perspective."

Introducing Caffè Giulia in Poughkeepsie, NY

Fans of Spettro on social media were in for a surprise back on April 3rd, 2026. The Italian Gastropub shared a post introducing Caffè Giulia to the Spettro family.

In the post they write:

Proudly introducing: Giulia
Stacked focaccia sandwiches and New York–style pizza by day, shifting into elevated red-sauce classics and cocktails at night. Caffè Giulia shares the space introducing authentic Italian gelato for standalone stops or a sweet finish to a meal.

Caffe Giulia Set To Open In Spring 2026

A press release shared by Giovanni Iliardi and Michael Purcell they give us a little more detail about what to expect from Giulia writing

By day, Giulia operates as a classically-inspired Italian sandwich and New York style pizza shop, offering freshly baked focaccia sandwiches, 16-inch pies, pastries, espresso, and an assortment of authentic Italian gelatos.

They add "The experience is designed for ease and accessibility, welcoming guests to enjoy high-quality ingredients in a fast casual setting that feels both fresh and familiar."

As days turn into nights, Giulia will transform into a "warm and nostalgic destination where classic red sauce favorites take center stage, complemented by cocktails and shared plates that invite connection and conversation."

Caffe Giulia will open this spring at 60 Raymond Avenue in Poughkeepsie, right around the block from Spettro.
