Have You Heard of The Waffle Wagon?

Who doesn't love visiting a local food truck every once in a while? The Hudson Valley has some great options including The Waffle Wagon.

In 2023 The Waffle Wagon hit the Hudson Valley food truck scene and took it by storm.

We spoke with Ryan, owner and operator of The Waffle Wagon, back when they first opened and he told us that they would be serving up a variety of different Belgium waffles with gourmet flavors.

Flavors include S'mores, Strawberries and Cream, Peanut Butter and Jelly, and more.

Recently, The Waffle Wagon shared an update that made up do a double take and caused our mouths to start watering.

Waffle Wagon Introduces Us to The Croffle

While scrolling Instagram a post from The Waffle Wagon immediately caught my eye.

They shared that they've added something new to their menu. It's called a Croffle...it's a croissant waffle!

The Waffle Wagon explains further writing:

 it's a warm, buttery, crispy croissant pressed to perfection in a waffle iron!

 

Then the Croffle is topped with gourmet toppings like ice cream, whipped cream..."all the gourmet toppings your heart desires."

I mean, just look at how amazing they look!

Anyone else hungry?

The Waffle Wagon states "Trust us… one bite and you’ll be obsessed." Of that I have no doubt.

Food Truck Hot Spot in East Fishkill, New York

The Hudson Valley is home to some of the best cuisine in the nation. Some of those eats are found not only in restaurants, but at some of our favorite local food trucks as well.

The Town of East Fishkill realized that and created a location where local food trucks would park on certain days and serve the community.

Food trucks, like the Waffle Wagon, will park over at 2760 Route 52 in East Fishkill for a few hours.

Times and trucks change daily and usually around spring the Town of East Fishkill will release their updated lineup. We'll keep an eye out for the 2026 update and share that information here.
