Hudson Valley residents have witnessed an increase in businesses popping up in the area. It's wonderful to see new shops opening their doors, especially after the past two years.

Some businesses are starting for the first time while others are on their second journey, it's exciting for the community in so many ways.

Lately, new boutiques, specialty shops, and restaurants have caught our eye in person and on social media. There's one thing that Hudson Valley residents have not heard about opening in our area, they are shocked.

When was the last time that the Hudson Valley had a boutique hotel? From what I can remember, there hasn't been one. Aside from Air BnB's, this is something that would be brand new for our area.

Michael Dorf is behind the idea of the proposed plan in the Hudson Valley.

He founded Knitting Factory music venue and City Winery. Dorf branched out and created the idea of City Winery with not only one location, but also a home in Atlanta, Boston, Nashville, and more exciting spots.

He is most known for purchasing a piece of history in Montgomery, NY.

Dorf purchased Montgomery Worsted Mills to create a City Winery location here, in the Hudson Valley.

Why have a hotel in an old milk factory?

This proposed hotel would be in a building of an old milk factory.

Dorf expressed how he wanted to pay a tribute to Borden who made a huge impact in the dairy industry. Borden was known for being successful in condensing milk and having it done in a commercial method. 

How was this milk factory important in the Hudson Valley?

Borden's company had a location in Wassaic in 1861 and assisted the Union Army with milk supply. 

Ultimately, this adds to the name of this potential, new business, "The Milk Factory". This boutique hotel would have historic roots.

Dorf stated how he would ride his bike and pass the Borden Milk Factory near one of the local trails in the Hudson Valley. Wouldn't this be a perfect spot to stop off and enjoy some downtime?

When would this hotel be built?

If this proposed plan is approved, it could take several months of planning, reviews, and meeting with the planning board of the new hotel and restaurant.

If the restaurant part of this idea gets approved, it would be called "Moo". The idea behind this would be working with local farms to bring a healthier aspect to the Hudson Valley.
